It is really simple to make your own vanilla sugar, simply fill an airtight kilner jar with 1kg of sugar and place inside 4 fresh vanilla pods that you have split. Leave for a month and the delicious vanilla flavour will infuse with the sugar, creating vanilla sugar. This is perfect to bake with and is a delightful gift idea.
Alternatively you can blitz the vanilla pods in a food processor and pass them through a fine sieve. Mix together the sieved vanilla with the sugar and store in an air tight container.
