Place each mixture into a piping bag fitted with a 1cm wide round nozzle. Press the mixture out onto a sheet of baking parchment placed on a baking tray, keeping the bag close to the paper until the macaroon is large enough, then twist the piping bag and lift away quickly. You can use a template to make this easier, just have a look online. Lift and drop the baking tray from a short height a few times to knock out any bubbles and make the macaroon surfaces smooth. Any little points on the mixture should disappear but if not, use a damp finger to soften them.
