It is important to wash and sterilise all jars before using, this stops any bacteria mixing with the jam and causing it to go off. To sterilise a jar ensure that it is clean, then put in an oven, set to approx 130°c and remove just when you are ready to pot your jam. Alternatively you can put the clean jars in a dishwasher on a quick rinse and make sure that the cycle will finish around the time that you want to pot your jam. You should pot your jam warm into a warm jar.
