These apple and cinnamon muffins are absolutely gorgeous, perfect for an afternoon tea time treat or for breakfast. Best of all they are low in fat and calories too at just 187 calories and 7.4g fat per muffin!

Ingredients

  • 270g 9½ oz Plain white flour (we use Allinson) Plain white flour
  • 4tsp 4tsp Cinnamon
  • ¼tsp ¼tsp Salt
  • 4tsp 4tsp Baking powder
  • 2 2 Eggs whole, beaten
  • 70g 2½ oz Half Spoon granulated sugar Half Spoon granulated sugar
  • 220ml 7½ fl oz Milk (semi-skimmed)
  • 90g 3¼ oz Butter (unsalted)
  • 1½tsp 1½tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 200°C, (fan 180°C, gas mark 6). Line a muffin tin with 12 cases. Sift the flour, cinnamon, salt and baking powder together into a bowl.

    • 4tsp 4tsp Baking powder
  2. Classic mode Step 2

    Whisk together the egg, Half Spoon Sugar, milk, vanilla and melted butter.

    • 2 2 Eggs whole, beaten
    • 70g 2½ oz Half Spoon granulated sugar Half Spoon granulated sugar
    • 220ml 7½ fl oz Milk (semi-skimmed)
    • 1½tsp 1½tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
    • 90g 3¼ oz Butter (unsalted)
  3. Classic mode Step 3

    Sift the dry flour mix onto the egg mixture and taking a large metal spoon very quickly fold together the dry ingredients and wet. Take care not to stir or over mix – the dry flour only just needs to be combined. Fold in the diced apple, again quickly and without over mixing.

  4. Classic mode Step 4

    Divide the mixture between the muffins cases and bake in the pre-heated oven for 20-25 minutes or until a skewer comes out clean. Remove from the muffin tin and leave on a wire rack to cool.
