Who says muffins have to be sweet? These savoury muffins are fabulous for a special breakfast, spot of lunch or a picnic snack.

Ingredients

  • 100g 3½ oz Bacon rasher(s) smoked back bacon rashers
  • 275g 9¾ oz Plain white flour (we use Allinson) Plain white flour
  • 1tbsp 1tbsp Baking powder
  • 1tsp 1tsp Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 1tsp 1tsp Salt
  • 125g 4½ oz Gruyère cheese, grated
  • 2 2 Tomato(es) deseeded and chopped
  • 2tbsp 2tbsp Chives chopped
  • 2 2 Egg(s) (free range)
  • 200ml 6⅞ fl oz Milk (whole)
  • 75g 2¾ oz Butter (unsalted) melted

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 190°C (170°C fan, gas mark 5). Line a muffin tin with 10 paper muffin cases or greasproof paper.

  2. Classic mode Step 2

    Grill the bacon until crispy and chop into pieces. In a large bowl, sift together flour and baking powder.

    • 100g 3½ oz Bacon rasher(s) smoked back bacon rashers
    • 275g 9¾ oz Plain white flour (we use Allinson) Plain white flour
    • 1tbsp 1tbsp Baking powder
  3. Classic mode Step 3

    Stir the sugar, salt and 3/4 of the cheese, bacon, tomatoes and chives into the flour mixture and mix well.

    • 1tsp 1tsp Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
    • 95g 3½ oz Gruyère cheese, grated
    • 2 2 Tomato(es) deseeded and chopped
    • 2tbsp 2tbsp Chives chopped
  4. Classic mode Step 4

    In another bowl, beat together the eggs, milk and melted butter and pour over the dry ingredients. Stir until just combined, the batter will be lumpy. Fill the muffin cases and sprinkle the tops with the reserved cheese.

    • 200ml 6⅞ fl oz Milk (whole)
    • 75g 2¾ oz Butter (unsalted) melted
    • 30g 1⅛ oz Gruyère cheese, grated
  5. Classic mode Step 5

    Bake for 20-25 minutes until risen and firm. Delicious eaten warm or cold.
