Chocolate Banana Cake

The combinations of chocoalte, banana and walnuts adds great flavour and texture to this cake. Why not serve as a quick pudding sliced with a scoop of ice cream!

Ingredients

3 Bananas Medium sized, ripe
175 grams Billington's Light Muscovado sugar
175 grams Self Raising Flour
2 Eggs Beaten
3 tbsp Sunflower Oil
55 ml Milk
110 grams Chocolate Chips Or chopped chocolate
75 grams Walnuts Chopped

Method

  1. Grease a 20 x 10 cm loaf tin. Preheat the oven to Gas Mark 4/180°C/350°F.
  2. In a mixing bowl mash the bananas with the sugar until smooth.
  3. Stir in the flour, eggs, oil and milk, mixing well until everything is thoroughly combined.
  4. Gently fold in the chocolate and walnuts.
  5. Pour into the tin and cook for 50-60 minutes until cooked through.
  6. Remove from the oven and cool in the tin for 5 minutes. Then turn out of the tin and leave to cool on a wire rack. Serve in slices.

"Really quick and easy to make but I had problems with the cook times and tin size. The only tin I had was a 26cm loaf tin which didn't appear to suit the mixture. As I have a fan oven it appears to have cooked too quickly"

Bakingmad: "Hi, That is quite a long tin compared to the one we use to bake this recipe. We use a 900g loaf tin,(2lb) which is 19cm x 9cm x 6.5 cm. The difference in tin size will have made the difference to the baking time of your cake too. As for oven temperatures with fan ovens it is always best to reduce the oven temperature by 20 degrees.
