Birthday Cupcakes Ingredients

150 grams Butter at room temperature
150 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
3 Free Range Eggs beaten Free Range Eggs
150 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
0.50 tsp Baking Powder
grated zest 1 lemon (or orange )
Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)

Additional Ingredients

For the decoration:

250 grams Fondant Icing (Silver Spoon) sugar Fondant Icing (Silver Spoon)
Green Food Colour (Silver Spoon Create) Green Food Colour (Silver Spoon Create)
40 sugar flowers
10 small candles
Water

How to make Birthday Cupcakes

  1. Heat the oven to 180°C, 160°C fan, gas 4. Line a cup cake tin with 12 paper cupcake cases.
  2. Place the butter and sugar in a mixing bowl and beat with a wooden spoon or electric mixer until light and fluffy. Gradually beat in the eggs a little at a time until smooth, adding a little flour if the mixture curdles. method tip
  3. Stir in the flour, baking powder and vanilla extract until smooth
  4. Place heaped dessertspoon full in each cupcake case and bake for 20-25 minutes until golden brown and just firm to the touch. method tip
  5. Leave in the tins for 5 minutes, then place on a wire rack to cool.
  6. For the decoration: Mix the fondant icing sugar with water as directed on the pack, then stir in a drop of gren food colouring to give the desired colour. spoon a little icing over each cake.
  7. Stick the sugar flowers on top and insert a small candle in the centre of each cake.

"the cakes tasted really nice i did add freshly sliced strawberries which made them scrumptious .the only bad thing about this recepie was that in the ingredient list it did not have the vanilla essence on the list but luckily i found some in the cupboard and the lst thing is the ingredients again but with the icing it did not say how much water you needed it is obvious that you need water for icing but i just had to guess but it still turned out perfect. i would recomend this recepie to a friend."
