How to make Father's Day Cupcakes

  1. Heat the oven to 180°C, 160°C fan, gas 4. Line a cup cake trays with 12 paper cupcake cases. method tip
  2. Place the butter and sugar in a mixing bowl and beat with a wooden spoon or electric mixer until light and fluffy. Gradually beat in the eggs a little at a time until smooth, adding a little flour if the mixture curdles. method tip
  3. Stir in the flour and cocoa powder until smooth. method tip
  4. Place heaped dessertspoon full in each cupcake case and bake for 20-25 minutes until golden brown and just firm to the touch. method tip
  5. Allow the cupcakes to cool completely.
  6. To make the butter cream; Mix the butter and icing sugar together until light and fluffy adding a drop of boiling water if necessary. Divide in half and beat cocoa powder to one bowl to make the chocolate icing. method tip
  7. To make the golfing cupcakes: Spread the cakes with white butter cream. Mix a little green food colouring into 2 tbsp granulate sugar and mix until the colour is even. Sprinkle over the icing. Roll small balls of ready to roll icing then using the end of a paintbrush make the dimples over the balls and place on the cake. Decorate with cocktails stick and paper flags.
  8. To make No.1 Dad cupcakes: Spread the cupcakes with chocolate butter icing and decorate with Silverspoon create letters.
  9. To make the football cupcakes: Spread the cupcakes with chocolate butter icing. Roll balls of Ready to Roll icing and cut in half, then use black Designer writing icing to pipe the black markings on the balls. Decorate with a little green coloured granulated sugar. To achieve this simply mix a little green food colouring into 2 tbsp of granulated sugar and mix until the colour is even.
  10. To make the rugby cupcakes: Spread the cupcakes with white butter cream. Mix a little green food colouring into 2 tbsp of granulated sugar and mix until the colour is even. Sprinkle the sugar over the icing. Roll a little chocolate or brown coloured sugar paste into small oval shapes and place on top of the cupcakes. Roll thin strips of white ready to roll icing and arrange over the rugby balls, then pipe the stitching with white writing icing.
  11. The cakes will keep for 3-4 days in a cake tin.
