Method

  1. Step 1:

    Before you start:
    Keep 1 tbsp of the flour and cocoa blend from the bag (for dusting).
    Cover 2 baking trays with baking parchment.
    Carefully cut out both the square and round templates.

  2. Step 2:

    Combine the caster sugar, flour & cocoa blend in a bowl with a spoon.  Chop the butter into cubes and add to your mixture.  Rub in the butter with your fingertips (until it looks like breadcrumbs), then form a ball with your chocolatey dough.

  3. Step 3:

    Dust your surface with the 1 tbsp of the flour & cocoa blend you’d set aside earlier and roll out the dough to the thickness of a £1 coin.  Lightly press the square template onto the dough and carefully cut around it using a cutlery knife.  Remember to cut a window with the round template in half of the biscuits.  Put each biscuit onto your baking tray and leave them to chill in the freezer for 20 mins.

  4. Step 4:

    Pre-heat your oven to 180C/160C/Gas 4 and bake your biscuits for 10 mins.  Remove from the oven and place your biscuits on a cooling rack.  They’ll soon harden up.

  5. Step 5:

    Make the buttercream by mixing together the icing sugar, butter and milk until smooth.  Then, when the biscuits are cool, pair them together by spreading buttercream onto one side of a whole biscuit and topping it with a biscuit with a window in it.  Now decorate the window with sprinkles!
