Billington's Light Muscovado is the ultimate light brown soft sugar. With a warm honey colour and creamy fudge flavour, it adds a toffee rishness to this recipe.

Ingredients
| 110 grams | Billington's Light Muscovado sugar | ![]() |
| 350 grams | Plain Flour | |
| 2 tsp | Baking Powder | |
| ½ tsp | Salt | |
| 1 tsp | Ground Cinnamon | |
| 250 ml | Milk | |
| 2 | Eggs | |
| 50 grams | Butter Melted | |
| 75 grams | Pecan Nuts Roughly Chopped |
Method

- Sift the dry ingredients into a mixing bowl.
- Beat together the eggs, milk and melted butter and pour into the dry ingredients.
- Add the pecans to the bowl and stir quickly until just blended - the mixture will look lumpy but it's this that makes the muffins light.
- Spoon into buttered muffin tins or paper muffin cases, filling them two-thirds full.
- Bake for 20-25 minutes Gas 6/200°C/180°C until risen and golden.
- Leave to cool in the tins for 2 minutes then finish cooling on a wire rack.
