How to make Chocolate Chip Brioche

  1. Place the flour sugar, yeast and salt in the bowl of an electric mixer and add the milk and eggs. Stir well to make a soft sticky dough. method tip
  2. Cut the butter into tiny cubes and add a little at a time to the dough, leaving the machine running until all the butter has been mixed in.
  3. Stir in the chocolate chips.
  4. Turn the dough out on a well floured work surface and divide into 8 x 75g portions. Shape each into a fat sausage and place on an oiled baking tray. Cover with oiled cling film and leave in a warm place until doubled in size.
  5. Set the oven to 200°C (180°C fan) Gas Mark 6. method tip
  6. Bake the brioche for 15-20 mins or until golden brown and they sound hollow when tapped underneath. Allow to cool.
  7. Best eaten within 1 day or toasted the day after.
