Fruit & Spice loaf Ingredients

250 ml Tea cold and strong
4 tbsp Marmalade
175 grams Sultanas
225 grams Unrefined Light Muscovado Sugar (Billington's) Unrefined Light Muscovado Sugar (Billington's)
375 grams Wholemeal Self Raising Flour (Allinson) Wholemeal Self Raising Flour (Allinson)
2 Happy Eggs, beaten Happy Eggs, beaten
5 grams Ground mixed spice

  1. Place the tea, marmalade and sultanas in a bowl and leave to stand for 1 hour. method tip
  2. Preheat oven to 150C/130C Fan /300F/ Gas mark 2. Add the remaining ingredients and mix well. method tip
  3. Grease and line a 900kg tin and spoon the mixture into the tin.
  4. Bake on the middle shelf for 1 hour 15 minutes.
  5. Check that the loaf is cooked by inserting a metal skewer. Push it into the centre of the cake and if the shewer comes out clean, the cake will be baked. If it is still sticky keep baking for a further 5 minutes until the skewer comes out clean.
  6. Remove from the tin and allow to cool on a wire rack before slicing.
