What is Sugar Paste Icing?

Sugar Paste Icing is also known as Ready to Roll Icing and is most commonly used to cover special celebration cakes for Christmas, Weddings and Birthdays.

 

It is a combination of ingredients that makes a smooth paste icing, usually presented as a block (although it is also available in a ready rolled version for convenience), which is rolled into a sheet and laid over cakes.  It gives a smooth finish with a slightly hardened outer and soft inner.

 

Sugar Paste is also great for making edible decorations, through shaping, moulding or modelling.

 

Standard Sugar Paste Icing is not suitable for more intricate sugar craft designs - a product called flower paste, available from specialist cake decorating shops, needs to be used for this.  It contains an extra ingredient to make it dry harder and retain structure when thinly rolled.
