Using our basic biscuit dough recipe, cut your dough into rectangles, bake your biscuits and allow them to cool. Once the biscuits are fully cooled, roll out the fondant and cut into individual rectangles the same size as your biscuits.
Roll 6 small balls of fondant and assemble on top of the rectangle of fondant similar to a lego brick. Secure these balls in place using icing or a dab of water.
Gently brush the top of your biscuits with boiled and cooled apricot jam, then stick the fondant on top to secure into place.
