I LOVE custard tart (with or without nutmeg on the top). My version adds a little sourness from sour cream, which makes it so damn delicious. The pastry uses brown butter, to make the flavours even deeper and delicious.  For the pastry: 145g unsalted butter, diced  1 medium egg  50g caster sugar  200g plain flour  1/2 tsp fine salt  For the filling: 500ml whipping cream  8 large egg yolks  75g caster sugar  100g sour cream  Optional: freshly grated nutmeg  For the pastry, put the butter into a saucepan and melt over a low heat. Once melted, increase the heat and allow the butter to boil. Swirl occasionally to prevent the milk solids from burning too quickly. Once the bubbling quietens, and you have a fine cappuccino-like foam on the surface and a golden-toned butter, plunge the hot pan into a bowl of cold water and allow to cool.  Whisk the egg and sugar until the sugar dissolves, then slowly add the cooled butter while whisking. Whisk until smooth and thick. Add the flour and salt and ‘cut’ through using a dough scraper or very thin spatula. Once it starts to clump together, tip it onto the counter and bring together into a paste. Flatten into a disc, wrap in cling and chill for an hour.  Preheat oven to 170C fan. Roll out the pastry and line an 8-inch loose-bottomed cake tin. Stab the base with a fork repeatedly. Have a little excess overhanging. Chill for 15 minutes, then line the pastry with baking paper and fill with dry rice. Bake for 25 minutes. Allow to cool then remove the paper and rice. Reduce the oven to 110C fan.  For the custard, bring the cream to a boil. Meanwhile, whisk together the yolks and sugar, then add the sour cream. Pour on the hot cream while whisking. Pass through a sieve and into the pastry case (top with grated nutmeg, if using). Bake for 30-40 minutes, or until just set with a trembling wobble.
