About our brioche recipe

These golden little brioche breads have a soft buttery texture and rich yellow colour from the eggs. Perfect for an indulgent breakfast.

What makes a brioche different to most breads?

While standard breads can be made from nothing more than water, flour, salt and yeast, a brioche will contain eggs, milk and butter. That makes a bread 'rich'. The high fat and protein contents of these ingredients is what makes the bread so delicious.

Is brioche bread or cake?

We are team 'brioche is bread' here at Baking Mad. For one thing, it's yeast-risen and has a chewy, bread-like interior. Brioche gets a few tablespoons of sugar, but the focus is more on enriching the dough with eggs and butter.

Method

  1. Step 1:

    Place all of the ingredients into a mixer with a dough hook attached.

  2. Step 2:

    Mix to a soft dough and knead for 5 minutes.

  3. Step 3:

    If mixing by hand, rub the butter into the flour.

  4. Step 4:

    Stir in the sugar, salt and sprinkle on the yeast.

  5. Step 5:

    Mix to a soft dough with the eggs and milk.

  6. Step 6:

    Knead on a floured board for 10 minutes.

  7. Step 7:

    Divide the dough into 8 pieces.

  8. Step 8:

    Make individual brioche by reserving one fifth of each piece for the ball on top.

  9. Step 9:

    Place each brioche into a muffin tin putting the small ball on top.

  10. Step 10:

    Leave to prove until double in size. Meanwhile preheat the oven to at 190°C (170°C fan, gas mark 5)

  11. Step 11:

    Bake for approximately 15-20 minutes.

    • 350g Allinson's Strong white bread flour
    • 175g Butter (unsalted)
    • 25g Silver Spoon White caster sugar
    • 1 tsp Salt
    • 1 Easy bake yeast sachet
    • 2 Egg(s) (free range) (beaten)
    • 4 tbsp Milk (whole) (warmed)
