These festive christmas snowmen cupcakes are so cute and great fun to make with all of the family.

Method

  1. Preheat the oven to 180°C (160°C, 350°F, gas mark 4). Place paper cases in a 12 hole bun tin.

  2. Beat the butter and sugar in a mixing bowl until light and creamy.

  3. Gradually beat in the egg then stir in the flour, baking powder and vanilla extract until smooth.

  4. Spoon into the paper cases and bake for 20-25 minutes until well risen and golden. Place on a wire rack to cool.

  5. To make the buttercream, beat together the butter, icing sugar, milk and vanilla extract until smooth. Spread on top of the cupcake and sprinkle with dessicated coconut.

  6. To make the snowman, shape two balls of white sugar paste icing one slightly larger than the other to form the head and base. Roll out a small amount of red sugar paste icing in a small sausage shape and wrap it around the neck of the snowman to form the scarf.

  7. Roll out small balls of black sugar paste icing and stick to the snowman shape to form the eyes, mouth and buttons.

  8. To finish, roll out a small amount of orange sugar paste icing into a cone shape and attach to the snowman for the carrot nose.

  9. Secure the snowman on to the top of the cupcake.
