Strawberry Flapjack

This is a traditional flapjack recipe full of delicious strawberries.

Method

  1. Heat the oven to 180°C (fan 160°C, gas mark 4). Put the butter and sugar together in a bowl and mix together. Stir in the flour.

    • 100g Unsalted Butter
    • 100g Unrefined Light Muscovado Sugar (We Love Billington's)
    • 150g Porridge Oats
  2. Add the golden syrup and mix well.

    • 2 tbsp Golden Syrup
  3. Stir in the porridge oats and the chopped strawberries.

    • 150g Strawberries (Washed, Chopped & Gently Dried)
    • 50g Plain White Flour (We like Allinson)
  4. Spoon the mix into a slightly greased 20cm shallow round baking dish and press down to cover the bottom of the dish. Bake for 20-25 mins or until the flapjack in golden brown and bubbling.

  5. Leave to go cold in the baking dish and then cut into wedges and serve cold with a dollop of clotted cream if liked.
