    Method

    1. Step 1

      Preheat the oven to 180°C (160°C fan, 350°F, gas mark 4). Grease and line a rectangular 27cm x 20cm baking tin with parchment paper.

    2. Step 2

      Peel, core and slice the apples into a bowl. Add the lemon juice and set aside until ready to use.

    3. Step 3

      Place the butter, caster sugar, eggs, flour and baking powder into a large bowl and beat until smooth and fluffy.

    4. Step 4

      Spoon half the cake mixture into the prepared tin and top with the apples. Spoon
      over the remaining mixture.

    5. Step 5

      Sprinkle with the demerara sugar. Bake for 45-50 minutes until golden brown and springy to the touch. Leave to cool before turning on to a cooling rack and cutting into squares to serve.

      • 225gButter (unsalted) (softened) 
      • 4Egg(s) (free range) (medium) 
      • 350gSelf-raising wholemeal flour 
      • 2 tspBaking powder 
      • 225gBillington's Unrefined Golden Caster Sugar 
      • Unrefined demerara sugar (to sprinkle)

    Good recipe. It seemed like a lot of flour and the mixture was pretty thick so I loosened it with a couple of splashes of milk. Tasted great though
