
About the bake
This not only tastes deliciously fresh, but it looks as pretty as a picture. Perfect for summer picnics or a treat after a long day in the garden.
Method
Step 1:
Spoon a tablespoon of berries into the bottom of the 6 glasses and refrigerate.
Step 2:
Place the gelatine leaves into a bowl, cover with cold water and leave to soak for 10 minutes. Pour the cordial into a bowl, drain the gelatine and add to the cordial.
Step 3:
Sit the bowl over a pan of simmering water and heat until the gelatine is dissolved completely and the mix is syrupy.
Step 4:
Add the sugar and stir until dissolved, then remove the bowl from the heat and let it cool for a few minutes.
Step 5:
Pour the prosecco or sparkling grape juice into your cordial mix, and then pour into the chilled glasses. Chill in the fridge until set.

- 150ml Elderflower cordial
- 2 tbsp Silver Spoon White Caster Sugar
- 425ml Prosecco (or sparkling grape juice)
