About the bake

This not only tastes deliciously fresh, but it looks as pretty as a picture. Perfect for summer picnics or a treat after a long day in the garden.

Method

  1. Step 1

    Spoon a tablespoon of berries into the bottom of the 6 glasses and refrigerate.

    • Mixed fresh berries (400g)
  2. Step 2

    Place the gelatine leaves into a bowl, cover with cold water and leave to soak for 10 minutes. Pour the cordial into a bowl, drain the gelatine and add to the cordial.

    • Gelatine leaves (4)
    • Elderflower cordial (150ml)
  3. Step 3

    Sit the bowl over a pan of simmering water and heat until the gelatine is dissolved completely and the mix is syrupy.

  4. Step 4

    Add the sugar and stir until dissolved, then remove the bowl from the heat and let it cool for a few minutes.

    • Silver Spoon White Caster Sugar (2 tbsp)
  5. Step 5

    Pour the prosecco or sparkling grape juice into your cordial mix, and then pour into the chilled glasses. Chill in the fridge until set.

I was looking for an easy dessert recipe for a summer dinner party and came across this fantastic jelly! It was very refreshing, tasted delicious and looked very pretty!
