Should you peel apricots for jam?
We don't think there's any need to peel your apricots before you start making your jam, but it all depends on your preferred texture when the jam is done.

Method
Step 1:
Stone and cut the apricots into small pieces, and crush thoroughly, do not peel the fruit.
Step 2:
Put the fruit in a pan with the sugar, heat gently stirring occasionally until the sugar has dissolved.
Step 3:
Bring quickly to a full rolling boil and boil rapidly for 1 minute, stirring occasionally.
Step 4:
Remove from the heat and stir in the apple pectin.
Step 5:
Skim, pot and cover in the usual way.
