About the bake

This unique way of serving fig, oranges and grapefruits not only looks stunning but also is really tasty too. Our Fig & Citrus Gratin is baked using x4 individual casserole dishes.

    Method

    1. Step 1

      Preheat the oven to 200°C (180°C fan, gas mark 6)

    2. Step 2

      Cut the figs in to quarters and peel the oranges and the grapefruit, removing the pith and skin of each segment. Boil the milk in a saucepan.

    3. Step 3

      In a bowl, mix together the cornflour and sugar, and beat in the egg yolks.  Pour in the boiling milk, and continue beating.  The mixture should thicken instantly.

    4. Step 4

      Divide the fruit between the 4 casseroles, and add in the milk mixture.  Place on the lids and bake in the oven for 30 minutes.

    5. Step 5

      When 30 minutes has almost passed, beat the egg whites and icing sugar until stiff.  Take the casseroles out of the oven and divide the meringue mixture between the 4, and place under a hot grill for 1 minute or until the top has browned.
