What makes Irish soda bread different?
The difference between this recipe and our soda bread recipe, is the inclusion of porridge oats and unrefined molasses sugar.

Method
Step 1
Preheat the oven to 200C (fan 180C, gas mark 6) and line a baking sheet.
Step 2
Mix all the dry ingredients together in a large bowl, rubbing in the molasses sugar to separate the crystals.
Step 3
Make a well in the centre, add the buttermilk and bring together with clean hands into a wet sticky dough.
Step 4
Knead the dough very lightly and form into a round and place on the lined baking sheet.
Step 5
Using a sharp knife, slash the bread in a cross shape that reaches from edge to edge, about 1.5cm deep.
Step 6
Bake in the oven for 35-40 minutes or until the loaf sounds hollow when tapped on the bottom.
Step 7
Cool on a wire rack with a clean damp cloth placed over the top. Eat warm or cold.
