Our Irish soda bread recipe is easy to follow and tastes delicious. It takes just 45 minutes to make.

What makes Irish soda bread different?

The difference between this recipe and our soda bread recipe, is the inclusion of porridge oats and unrefined molasses sugar.

    Method

    1. Step 1

      Preheat the oven to 200C (fan 180C, gas mark 6) and line a baking sheet.

    2. Step 2

      Mix all the dry ingredients together in a large bowl, rubbing in the molasses sugar to separate the crystals.

    3. Step 3

      Make a well in the centre, add the buttermilk and bring together with clean hands into a wet sticky dough.

    4. Step 4

      Knead the dough very lightly and form into a round and place on the lined baking sheet.

    5. Step 5

      Using a sharp knife, slash the bread in a cross shape that reaches from edge to edge, about 1.5cm deep.

    6. Step 6

      Bake in the oven for 35-40 minutes or until the loaf sounds hollow when tapped on the bottom.

    7. Step 7

      Cool on a wire rack with a clean damp cloth placed over the top. Eat warm or cold.

      • 200gVery strong wholemeal bread flour 
      • 100gPorridge oats 
      • 2 tbspUnrefined molasses sugar 
      • 1 tspSalt 
      • 2 tspBicarbonate of soda

    I made the bread vegan by replacing the buttermilk with 350ml of curdled soya milk (that's 325ml soya milk+25ml apple cider vinegar left to stand for 5mn).
    It worked well, except that the flavour of the molasses was too strong.
    So the second time I made it, I used 1 tbsp molasses and 1 tbsp soft brown sugar.
    Vegan again.
    And it's perfect.
