Method

  1. Step 1

    Soak the dried peaches in 300ml of water for at least 4 hours.

    • Peaches (dried) (225g)
    • Warm water (375ml)
  2. Step 2

    Peel and core the apples and pears and cut into slices. Put in a pan with the peaches and 75ml water.

    • Warm water (375ml)
    • Fresh Pear(s) (2254g)
  3. Step 3

    Cover and simmer gently until tender (approximately 15 minutes).

  4. Step 4

    Add the sugar, stir until dissolved.

    Ingredients for this step

    • Billington's unrefined golden granulated sugar (1.7kg)
  5. Step 5

    Bring to a full rolling boil and boil hard for 2 minutes.

  6. Step 6

    Remove from the heat and stir in the apple pectin.

  7. Step 7

    Skim if necessary. Pot and cover in the usual way.
