Delicious, easy to make biscuits, perfect for coffee time.

Method

  1. Preheat oven to 180°C (160°C fan, gas mark 4). Put the oats, coconut, flour and sugar into a bowl.

  2. Melt the butter in a small pan and stir in the golden syrup. Mix the bicarbonate of soda to 2 tbsp boiling water, then add to the pan.

  3. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.

  4. Spoon the mixture on to buttered baking sheets, about 2.5cm/1" apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.

    Too much baking soda! Use half as much. The biscuit taste strongly of baking soda.

    very nice, I didn't have coconut so I used almond flour and almond flakes and added one egg. very easy and quick !
