If like us you love doughnuts and muffins why not have the best of both worlds by combining the two to create these delicious apple doughnut muffins (otherwise known as duffins) Ideal for a coffee morning with friends or as a breakfast snack.

Method

  1. Mix the dry ingredients together and cut in the butter using a knife.

  2. Whisk the egg, milk and grated apple together.

  3. Mix the wet ingredients with the dry until just incorporated.

  4. Pour the batter into a lightly greased mini muffin pan and bake at 190°C for 10-15 minutes until slightly golden.

  5. Once baked dip the muffins in melted butter then roll in the cinnamon sugar mixture.

    Love these made many times with different flavours, mashed up 2 ripe bananas or add blueberries or raspberries. Ignore the 'serves 6' on this recipe it's perfect for a 24 hole MINI muffin tray.
