Why not try this variation on a classic British dessert, but in the form of a cake instead.

Method

  1. Preheat the oven to 180°C (fan 160°C, gas mark 4). Line a baking tray (33cm x 18cm approx) with greaseproof paper.

  2. Cream the butter and sugar together. Beat in the eggs and vanilla extract, until mix is light and creamy.

  3. Fold in the sifted flour, baking powder and ground almonds. Spoon the mixture into the prepared tin.

  4. Lay the strawberries cut side down into the mixture along with the broken meringue nests.

  5. Bake for 35 minutes until golden brown or until a skewer inserted comes out clean.

  6. Allow to cool and then cut into 12 portions and serve on its own or with cream.
