About the bake
These adorable, individual fruit meringues are perfect when served at a dinner party. The meringues can be made in advance saving you plenty of time to entertain your guests and you can experiment with a whole host of fruity toppings.
Method
Step 1:
In a saucepan place the raspberries with the liqueur, and cook on a slow heat until the fruits start to soften. Using a fork, mash the mixture up roughly and leave to cool.
Step 2:
In a large bowl, and using an electric hand whisk, whisk the cream with the sugar and vanilla extract to nice soft peaks.
Step 3:
In another large bowl, stir the mascarpone around to soften it, then fold in the cream.
Step 4:
In individual glass dishes, layer all the different ingredients. Top with any remaining fresh raspberries and just before serving sprinkle the popping candy on the top.

- 2 tsp Raspberry liqueur
- 250ml Whipping cream
- 150g Billington's Unrefined Golden Caster Sugar
- 1 tsp Nielsen-Massey Vanilla Extract
- 250g Mascarpone cheese
- 50g Meringue nests
- 2 Popping candy (sachets)
