This lemon granita sorbet is absolutely delicious and so refreshing, perfect as a Summer dessert. Serve a couple of scoops of lemon granita with a shot of Limoncello poured over it, for an extra lemony punch!
Put the sugar and water into a large saucepan with the lemon zest, bring to the boil and stir until the sugar dissolves, simmer for 1 minute.
Remove from the heat, cool then stir in the lemon juice.
Pour into a shallow plastic container and chill in the fridge for about 4 hours or overnight.
Place in the freezer, stirring every hour until frozen, this should take about 4 hours. The consistency should be a little granular.
