About the bake

Do you enjoy a deliciously refreshing glass of Pimms in the sun - well you are sure to love this Pimm's sorbet too. It's the perfect Summer dessert for a garden party.

Method

  1. Step 1:

    Put the sugar and orange juice into a large saucepan and bring to the boil, stirring until the sugar dissolves.

  2. Step 2:

    Take off the heat and add the mint sprigs and diced cucumber, cover and leave for about 20 minutes.

  3. Step 3:

    Strain into a large bowl, removing the cucumber and mint. Add the Pimm’s and stir to combine.

     

  4. Step 4:

    Chill in the fridge for about 4 hours or overnight.

  5. Step 5:

    Churn in an ice cream maker according to manufacturer’s instructions OR place in the freezer, stirring every hour until frozen. This should take about 6 hours.

  6. Step 6:

    Store in your freezer or serve immediately.

    • 200g Billington's Unrefined Golden Caster Sugar
    • 600ml Orange juice (freshly squeezed)
    • 4 Mint leaves
    • 0.25 Cucumber (diced)
    • 150ml Pimms
