Why not try making this alcoholic Mojito sorbet. Perfect for an adult after dinner dessert or just as a Summer time treat. Serve with a slice of lime and a sprig of mint

Method

  1. Put the caster sugar and water into a saucepan over a medium heat, stirring until the sugar dissolves.

  2. Add the mint leaves, stir until the syrup starts to boil, reduce the heat and simmer for 5 minutes.

  3. Remove from the heat, cover and leave to stand for about 15 minutes.

  4. Strain the syrup mixture into a large bowl (removing the mint leaves).

  5. Add the lime juice, rum and lime zest and stir. Then add the muscovado sugar and stir until dissolved. Pour into a shallow plastic container.

  6. Chill in the fridge for about 4 hours or overnight.

  7. Churn in an ice cream maker according to manufacturer’s instructions OR put in the freezer and stir every hour until frozen, this should take about 4 hours.
