These pancakes are a great savoury alternative for pancake day or an easy to make light meal. You can use any cheese and even add some extra cherry tomatoes.

Method

  1. Whisk the flour, eggs and milk together to form a batter, whisking until there are no lumps. Leave to stand for about 30 minutes.

  2. Lightly grease a frying pan with oil and heat until hot, then spoon 2 tablespoon of the batter into the pan and swirl to coat the base of the pan with batter. Cook for 1-2 minutes on each side or until golden.

  3. Transfer to a plate and keep warm whilst you make the rest.

  4. For the filling place a slice of ham onto the pancake then some slices of brie on top, sprinkle some rocket on top then fold over and place on a baking tray. Repeat with the other pancakes, then finally sprinkle over some grated cheddar cheese and place under the grill until the cheese has melted.
