Brighten up your cakes and bakes with this delicious and refreshing passion fruit icing. Not only does this icing give a naturally vibrant yellow colouring but also a tangy tropical taste.

Method

  1. Melt the butter gently in a heatproof bowl over simmering water or in a microwave.

  2. Chop the passion fruits in half and scoop out the flesh, passing it through a sieve to leave the juice.

  3. Add the passion fruit juice and lemon juice to the melted butter and whisk together.

  4. Gradually add the icing sugar and stir continuously until you reach the desired consistency to pour over your cake.

    Great frosting!! Doesn’t make enough though. We made it into a glaze by adding milk and it is AMAZING! Love this frosting!
