This is a really quick and easy bread to make. There is no kneading or proving required.

Method

  1. Preheat the oven to 200°C (180°C fan, gas mark 6). Sift the flour, bicarbonate of soda and cream of tartar into a large bowl, then stir in the salt.

  2. Lightly rub in the butter until the mixture resembles breadcrumbs.

  3. Make a well in the centre and gradually add the buttermilk and enough of the water to form a soft dough

  4. Turn the dough onto a floured surface and knead lightly, then shape into a 20cm round. Place on a baking sheet and, using a sharp knife, mark a deep cross on the top.

  5. Bake the loaf for 30 minutes or until risen and golden brown. Cool on a wire rack. Serve warm or cold.
