Strawberry meringue splits

These delicate meringue bites are a wonderful addition to any afternoon tea. The fresh strawberries taste great with the meringue, however, these can be swapped with other delicious fresh berries if you prefer.

Method

  1. Preheat the oven to 110°C (90°C, gas mark 1/4)

  2. Put the egg whites into a clean glass bowl and whisk with an electric beater until they begin to form stiff peaks.

  3. Add the sugar a little at a time and keep whisking until the  mix is stiff and forms peaks that hold their shape.

  4. Now gently fold in the chopped strawberries.

  5. Spoon about 20 small portions of the meringue onto 2 baking sheets and bake for about 2 hours or until they are crispy.

  6. Allow to cool in the oven.

  7. When fully cooled, sandwich the meringues together with whipped cream and dust with icing sugar.
