Method
Step 1:
Preheat oven to 180°C (160°C fan, gas mark 4). Put the oats, coconut, flour and sugar into a bowl.
Step 2:
Melt the butter in a small pan and stir in the golden syrup. Mix the bicarbonate of soda to 2 tbsp boiling water, then add to the pan.
Step 3:
Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
Step 4:
Spoon the mixture on to buttered baking sheets, about 2.5cm/1" apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.

- 100g Billington's Unrefined Golden Caster Sugar
- 100g Butter (unsalted) (plus extra for greasing)
- 1 tbsp Golden syrup

Ooohh delicious! Baked them a couple of times now. I would say spread them thinner, about 1cm, and let them cool before eating to get the texture right

Walnut sized drops of mixture cooked at 160 for ten mins led to very thin, extremely spread out biscuits. They look & taste much better if you use very small tsps of mixture and cook at 150 for 12 mins. I had to experiment several times before getting them right.

Too much baking soda! Use half as much. The biscuit taste strongly of baking soda.
