About the bake

If like us you love doughnuts and muffins why not have the best of both worlds by combining the two to create these delicious apple doughnut muffins (otherwise known as duffins) Ideal for a coffee morning with friends or as a breakfast snack.

These no bake apple doughnuts are best enjoyed still a little warm from the oven and served with a cup of tea.

    Method

    1. Step 1

      Mix the dry ingredients together and cut in the butter using a knife.

    2. Step 2

      Whisk the egg, milk and grated apple together.

    3. Step 3

      Mix the wet ingredients with the dry until just incorporated.

    4. Step 4

      Pour the batter into a lightly greased mini muffin pan and bake at 190°C / gas mark 5 for 10-15 minutes until slightly golden.

    5. Step 5

      Once baked dip the muffins in melted butter then roll in the cinnamon sugar mixture.

      • 0.5 tspNutmeg 
      • 70gButter (unsalted) 
      • 120gSilver Spoon Caster Sugar 
      • 1Apple(s) (large, peeled, grated) 
      • 1Egg(s) (free range) 
      • 50mlMilk (whole) 
    • For the sugar mix

      • 80gSilver Spoon Caster Sugar 
      • 1 tbspCinnamon
