You don't need to make a reservation for a Tale As Old As Time afternoon tea when you can create your own homemade version, starting with these adorable Belle Cupcakes. Sweet vanilla cupcakes topped with a yellow buttercream reminiscent of Belle's beautiful ballgown from our favourite tale and of course the infamous red rose.

Method

  1. Step 1:

    Preheat the oven to 180°C (160°C fan, gas 4). Line a cupcake tin with 12 paper cupcake cases.

  2. Step 2:

    Beat together the butter and sugar until light and fluffy.

  3. Step 3:

    Gradually add in the eggs, baking powder, flour and vanilla extract and beat until fully combined. 

  4. Step 4:

    Spoon the mixture into the cupcake cases filling each of them 2/3 full.

  5. Step 5:

    Bake for 20-25 minutes until the cupcakes are golden and springy to touch.

  6. Step 6:

    Whilst the cupcakes are baking make the buttercream by beating together the butter, icing sugar, food colouring and vanilla extract.

  7. Step 7:

    Fill a piping bag with the buttercream and pipe swirls on top of the cupcakes. To finish, create a rose from the red sugar paste icing.

  • For the Cupcakes

    • 150g Butter (unsalted) (softened)
    • 150g Billington's Unrefined Golden Caster Sugar
    • 3 Egg(s) (free range) (large)
    • 150g Self-raising white flour
    • 1/2 tsp Baking powder
    • 1/2 tsp Nielsen-Massey Vanilla Extract
  • For the Buttercream

    • 250g Icing sugar
    • 80g Butter (unsalted) (softened)
    • 1 tsp Nielsen-Massey Vanilla Extract
    • A few drops Yellow food colouring
  • For the Rose

    • 100g Red sugar paste icing
