Method
Step 1:
Cook the raspberries and pomegranate juice in a saucepan on a low heat until the fruit softens. Mash roughly with a fork and leave to cool.
Step 2:
In a large bowl, using an electric hand whisk, mix the cream with sugar and vanilla extract to nice soft peaks.
Step 3:
In another large bowl, stir the mascarpone around until soft, then fold in the cream.
Step 4:
In individual glass dishes, layer all the different ingredients, top with fresh raspberries and sprinkle the popping candy on top before serving.

- 150g Silver Spoon White caster sugar
- 250ml Double cream
- 1 tsp Nielsen-Massey Vanilla Extract
- 250g Mascarpone cheese
- 12 Meringue nests ((mini))
- 2 tsp Popping candy

Brilliant twist on an Eton Mess, I have nicknamed it my 'Premium Eton Mess'. Always receives a fabulous reaction after a BBQ. I use Golden Caster Sugar and also don't have pomegranate juice so swap for a teaspoon of water.
This is NOT an Eton Mess.
Eton Mess is meringue, strawberries (or raspberries, at a push) and cream.
No pomegranate juice, mascarpone cheese or popping candy.
