About our Eton Mess recipe:

This classic British pudding is always a crowd-pleaser on warm, sunny days, and incredibly easy to create.

It's a deliciously-fresh mixture of ripe summer berries, paired with whipped cream and meringue. Serve in bowls with a sprinkle of grated white chocolate, sit back, and enjoy.

    Method

    1. Step 1

      Place 250g of the strawberries and 100g of the raspberries in a bowl, and gently crush with the back of a fork to release some of their juice and flavour.

    2. Step 2

      Add the crushed strawberry and raspberry juice to the bottom of your serving bowl(s), keeping aside a little to drizzle on top.

    3. Step 3

      In a separate large bowl, using an electric hand or stand mixer, whip together the cream, sugar and vanilla extract to soft peaks. You can check to see if it's ready by lifting the whisk out of the mix - if it's done, when the whisk is removed the tip of the cream is soft enough to fold back on itself.

    4. Step 4

      Crush up your meringues and sprinkle into the cream, and gently add the remaining strawberries and raspberries into the cream and meringue mix. Fold the mixture together gently.

    5. Step 5

      Spoon this mixture into your serving bowls and finish with a drizzle of the remaining strawberry and raspberry juice.

    6. Step 6

      For extra flair, you could top your Eton Mess with a sprinkling of grated white chocolate or crushed nuts.

    Brilliant twist on an Eton Mess, I have nicknamed it my 'Premium Eton Mess'. Always receives a fabulous reaction after a BBQ. I use Golden Caster Sugar and also don't have pomegranate juice so swap for a teaspoon of water.
