About the bake

This classic British pudding is always a crowd pleaser and incredibly easy to create. Use fresh summer berries, paired with cream and meringue and it really is a simple as that.

Method

  1. Step 1:

    Place 250g of the strawberries in a bowl and gently crush with the back of a fork to release some of the juice and flavour.

  2. Step 2:

    Add the crushed strawberry juice to the bottom of your serving bowl(s) (keeping aside a little to drizzle on top)

  3. Step 3:

    In a separate large bowl, using an electric hand or stand mixer, whip together the cream, sugar and vanilla extract to a soft peak– this should mean when the whisk is removed the tip of the cream is soft enough to fold back on itself.

  4. Step 4:

    Crush up your meringues and sprinkle into the cream, along with the remaining berries gently folding them all in together.

  5. Step 5:

    Spoon this mixture into your serving bowls and finish with a drizzle of the remaining strawberry juice.

  6. Step 6:

    For extra flair, you could top with a sprinkling of grated white chocolate or nuts.

    • 350g Strawberries
    • 200g Raspberries
    • 150g Silver Spoon White caster sugar
    • 250ml Double cream
    • 1 tsp Nielsen-Massey Vanilla Extract
    • 12 Meringue nests ((mini))
    • A grated handful White chocolate
