Method
Step 1:
Place 250g of the strawberries in a bowl and gently crush with the back of a fork to release some of the juice and flavour.
Step 2:
Add the crushed strawberry juice to the bottom of your serving bowl(s) (keeping aside a little to drizzle on top)
Step 3:
In a separate large bowl, using an electric hand or stand mixer, whip together the cream, sugar and vanilla extract to a soft peak– this should mean when the whisk is removed the tip of the cream is soft enough to fold back on itself.
Step 4:
Crush up your meringues and sprinkle into the cream, along with the remaining berries gently folding them all in together.
Step 5:
Spoon this mixture into your serving bowls and finish with a drizzle of the remaining strawberry juice.
Step 6:
For extra flair, you could top with a sprinkling of grated white chocolate or nuts.

Really delicious and super easy!
Brilliant twist on an Eton Mess, I have nicknamed it my 'Premium Eton Mess'. Always receives a fabulous reaction after a BBQ. I use Golden Caster Sugar and also don't have pomegranate juice so swap for a teaspoon of water.
This is NOT an Eton Mess.
Eton Mess is meringue, strawberries (or raspberries, at a push) and cream.
No pomegranate juice, mascarpone cheese or popping candy.
