Method
Step 1
Melt the butter gently in a heatproof bowl over simmering water or in a microwave.
Step 2
Chop the passion fruits in half and scoop out the flesh, passing it through a sieve to leave the juice.
Step 3
Add the passion fruit juice and lemon juice to the melted butter and whisk together.
Step 4
Gradually add the icing sugar and stir continuously until you reach the desired consistency to pour over your cake.
