Brighten up your cakes and bakes with this delicious and refreshing passion fruit icing. Not only does this icing give a naturally vibrant yellow colouring but also a tangy tropical taste.

Method

  1. Step 1:

    Melt the butter gently in a heatproof bowl over simmering water or in a microwave.

  2. Step 2:

    Chop the passion fruits in half and scoop out the flesh, passing it through a sieve to leave the juice.

  3. Step 3:

    Add the passion fruit juice and lemon juice to the melted butter and whisk together.

  4. Step 4:

    Gradually add the icing sugar and stir continuously until you reach the desired consistency to pour over your cake.

    • 30g Unsalted butter
    • 2 tsp Juice of one whole lemon
    • 200g Silver Spoon Icing Sugar
