Try using freshly picked blueberries and a homemade gooseberry jam for a special touch to this sweet berry bread. It is truly delicious served freshly baked, toasted or even used  to create a fruity bread and butter pudding. Mix and match the berries and jam to change the flavour of the bread, using the latest in season fruit.

Method

  1. Put the flour, blueberries and salt into a bowl and sprinkle the yeast over.

    • 450g Allinson Strong White Bread Flour
    • 100g Blueberries (Semi-dried)
    • 1 tsp Salt
  2. Mix to a soft dough with the jam, butter, egg, water and milk.

    • 4 tbsp Gooseberry Jam
    • 3 tbsp Butter (Unsalted, Melted)
    • 1 Egg(s) (Free Range) (Medium, Beaten )
    • 115ml Water
    • 115ml Milk (Whole)
  3. Turn onto a floured surface and knead for 10 minutes.

  4. Shape as desired and put into an appropriate greased tin.

  5. Leave to prove until double in size.  Meanwhile, preheat the oven to 220°C (200°C fan, gas mark 7).

  6. Place in the preheated oven and immediately turn the oven temperature down to 200°C (180°C fan, gas mark 6) and bake for 25-30 minutes.

  7. Cool in a wire rack before slicing.
