Why should you make this Chocolate Mousse? It takes 15 minutes to make, uses only two ingredients (eggs and chocolate) and makes a classy dessert for four people. The key to this Chocolate Mousse recipe is to make sure you get the home made Bain Marie (bowl over warming water in a saucepan) right. To high a heat and you will risk burning your chocolate. If you are not comfortable doing it that way, melt the chocolate in the microwave for around 30 seconds. We've found that letting your chocolate cool down until it is barely warm is the best way to avoid the warming the egg whites. The second secret to making a great Chocolate Mousse is to make sure you whip the egg whites until they are foamy and beginning to hold their shape. This ensures your Chocolate Mousse will be light and fluffy when you add in the chocolate. This recipe does use raw egg whites so do check that your guests are all ok eating this. When setting the Chocolate Mousse, we found that anywhere between 8 and 24 hours is enough time to allow them to set properly. Make sure you leave enough time in your schedule for setting.

Method

  1. Step 1:

    Melt the chocolate in a heatproof bowl over boiling water (making sure that the water isn't touching the bowl).

  2. Step 2:

    Once the chocolate has melted, whisk the egg whites until firm.

  3. Step 3:

    Pour the egg white mixture into the chocolate, and mix well.

  4. Step 4:

    Pour the mixture into 4 ceramic cups (or small glasses) and place in the fridge to set.
