This classic chocolate mousse is the perfect after dinner indulgent dessert, served with cream it's absolutely gorgeous!

Method

  1. Step 1:

    Heat the cream in a small pan until it just reaches boiling point then remove from the heat. Add the chocolate and stir until it has melted. Add the brandy and whisk in the egg yolks.

  2. Step 2:

    In a clean grease free bowl, whisk the egg whites until they form stiff peaks, then using a metal spoon, gently fold in the chocolate mixture. Pour into individual bowls or glasses and chill for a couple of hours before serving.

    • 125ml Double cream
    • 125g Plain chocolate (70% cocoa) (chopped)
    • 1 tbsp Brandy
    • 2 Egg(s) (free range) (separated)
