This deliciously light dessert is infused with cardamom seeds and rosewater is perfect to follow up a spicy meal or to wow your guests at a dinner party.

Method

  1. Place the rice and cream with almost all the milk in a pan over a low heat and simmer. Keep the pan uncovered for 30-40 minutes, occasionally stirring to prevent the rice from sticking to the pan. Continue until the rice is tender and the milk is almost absorbed.  You may need to add more milk if necessary.

  2. Stir in  the sugar, cardamon and rosewater and continue cooking until thick and creamy.  Pour into serving dishes and leave to cool and set.

  3. Sprinkle with cinnamon or pistachios just before serving.
