This fruit and spice loaf is so yummy, and can be enjoyed all year round not just at Christmas.

Method

  1. Place the tea, marmalade and sultanas in a bowl and leave to stand for 1 hour.

  2. Preheat oven to 150°C (fan 130°C, gas mark 2). Add the remaining ingredients and mix well.

  3. Grease and line a 900g tin and spoon the mixture into the tin. Bake on the middle shelf for 1 hour 15 minutes.

  4. Check that the loaf is cooked by inserting a metal skewer. Push it into the centre of the cake and if the skewer comes out clean, the cake will be baked. If it is still sticky keep baking for a further 5 minutes until the skewer comes out clean.

  5. Remove from the tin and allow to cool on a wire rack before slicing.
