These adorable individual strawberry sponge puddings are perfect for a dinner party to impress friends and family. They are also the ideal size for a kids party. The Billington’s unrefined golden caster sugar make this sponge extremely light with a subtle buttery taste. Delicious when served with fresh cream or custard, not only do they look impressive but they taste divine too. Why not try our strawberry jam recipe to really impress the crowd?

Method

  1. Preheat the oven 180°C (160°C, gas mark 4)

  2. Grease 6 small ramekins with butter and layer the bottom with the halved strawberries.

  3. Beat together the sugar and butter until soft and pale in texture and colour.

  4. Beat in the eggs one at a time, then gently fold in the flour.

  5. Pour the mixture over the strawberry base and bake the puddings for 20-25 minutes until the top is golden brown.

  6. Remove from the oven and serve.
