Why not try making this quick homemade Christmas pudding....this recipe is so quick you can make it on Christmas Day.  Make it a real family occasion and get help with assembling the ingredients and preparing the pudding basin!

Method

  1. Butter and line the base of a 1.5 litre pudding basin, which is suitable for use in a microwave, with greaseproof paper.

  2. In a large bowl, stir the ingredients together, adding them one at a time in the order listed in the ingredient list. Stir to combine evenly.

    • 300g Mincemeat
    • 140g Marmalade (Fine Shred)
    • 200g Billington's Unrefined Molasses Sugar
    • 4 tbsp Black Treacle
    • 3 Free Range Large Egg(s) (Beaten)
    • 4 tbsp Whisky
    • 100g Unsalted Butter (Frozen & Grated)
    • 100g Self-Raising White Flour
  3. Tip in to the prepared pudding basin and cover with a disk of greaseproof paper. Place the pudding on a plate and microwave on medium for 20 - 25 minutes until cooked and a skewer inserted comes out clean.

  4. Leave to stand for 5 minutes, then turn out and enjoy served with brandy butter.

    This is a firm favourite in our house every Christmas. Tastes lovely and with a little adjustment with the cooking times dependant on your microwave comes out perfect. We use this recipe as our children have nut allergies and this is nut free so it is perfect! We change the whisky for orange or apple juice. I will never use another recipe and recommend to anyone to try this before anything else
