These mini cheese and tomato pizzas are fantastic to serve at a party or special celebration and can also be great for children. Why not try out some different pizza toppings.

Method

  1. Put the flour, yeast and salt into a bowl and mix together, then make a well in the centre.

  2. Stir the sugar into the warm water then pour into the well in the dry ingredients.

  3. Working from the edge mix all the dry ingredients into the water. When the mix has come together turn out onto a lightly floured surface and knead for 10 minutes. The dough should be soft and spring back to the touch.

  4. Flour the dough and cover with cling film, then leave to rest for about 15 minutes.

  5. Carefully roll out the dough until it is about 1cm thick, then use a 6cm round cutter to cut out discs of dough, depending on how many pizzas you want to make. Then cover and leave to rest for about 10 minutes.

  6. Preheat the oven to 200°C (180°C fan, gas mark 6). For the topping; spread the tomato purée over the pizza, then sprinkle on the diced tomato and grated cheese.

  7. Bake in the oven for 8-10 minutes until the cheese has melted.
