Perfect for your picnic lunch box or an afternoon treat – these mini muffins are just over a mouthful.

Method

  1. Preheat the oven to 200°C (fan 180 °C, gas mark 6). Line a mini muffin tin with paper muffin cases.

  2. Cream the butter and sugar together then slowly add the eggs, mix for three minutes.

  3. Add the flour, baking powder and chocolate chips stir to combine.

  4. Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.

  5. Bake for 20 minutes, or until golden on top. Leave to cool in the tin for 5 minutes, eat warm or cold.
